French fries can . Like me, you can probably remember a time when you’ve made a decision about which drive-thru to roll up to based on how good the fries are. Even Taco Bell and KFC — two places that don’t fries have them on the menu — and you better believe they’re trying their best to keep up with the competition (both are surprisingly great).
There are two reasons fries are so prevalent in fast food: I’m sure you’ve had a meal where you keep mindlessly eating french fries just because they’re still on the tray, regardless of whether or not you’re hungry. Not to get all nerdy on you in an article about fast food but, there is a science behind why French fries are so damn good. When potatoes are fried hot oil the sugars and amino acids in the spuds go through the It’s what gives French fries their distinct color and texture.
