National Escargot Day, celebrated annually on May 24, honours the culinary delicacy of escargot, or cooked snails. This day encourages food enthusiasts to indulge in this gourmet treat, particularly popular in French cuisine. Cooking escargot is a delicate process that brings out the tender and flavourful nature of the snails.

To prepare escargot, clean and purge the snails to remove any impurities. Once cleaned, simmer the snails in a broth of white wine, shallots, garlic, and herbs for about an hour until they become tender. After simmering, remove the snails and let them cool.



For the classic French preparation, stuff each snail shell with a mixture of softened butter, minced garlic, chopped parsley, and a pinch of salt. Place the stuffed shells in an ovenproof dish and bake in a preheated oven at 375°F (190°C) for 10-12 minutes or until the butter is bubbling and golden. Serve immediately with crusty bread to soak up the delicious garlic butter.
