Peaches and grilled chicken scream summertime to me. This is a showstopping recipe — one that I make often on Fire Island for a house full of hungry men after an afternoon of pools, beaches and dancing. This is an impressive and beautiful but quick weeknight dinner.

It's perfect for dinner for one or date night. It also highlights the beauty and freshness of summer strawberries. I eat a lot of rotisserie chicken and I like to change up the texture by crisping it up in a few tablespoons of oil.



It takes about six minutes but it adds so much to salads and soups. And you can use the skin to make chicharrones, which make a great crunchy addition to salads and soups..
