Veterinarian and food enthusiast Dr. Robert H. Lo has published a new coffee table book titled “Pimamanan: A Taste of Pampanga’s 65 Heirloom Dishes,” which pays tribute to the province’s gastronomic soul amid contemporary tastes.
According to Dr. Lo, “Pimamanan” translates to “heritage,” and he described the book as his heartfelt letter to Pampanga’s culinary soul, which features a foreword by renowned food historian Felice Prudente Sta. Maria, with text and photos by Ruston Banal and Gia Hasegawa, and Wil Maligalig helmed the project as project manager.
The coffee table book was launched alongside his 65th birthday celebration, during which he noted that he enlisted Maligalig to help realize his vision. Within its carefully designed pages, readers will find meticulous documentation of the unique flavors, ingredients, and cooking techniques that define Pampanga’s distinct culinary identity. Dr.
Lo’s book aims to preserve and celebrate the province’s rich gastronomic traditions, showcasing over 60 heirloom dishes passed down through generations. Each recipe is accompanied by vivid photography and detailed descriptions which provide a comprehensive guide to the time-tested methods that continue to shape Pampanga’s cuisine, where in an era of modern culinary trends often overshadow traditional practices. It’s suggested that by preserving these 65 heirloom dishes, the coffee table book ensures that future generations can still enjoy the genuine flavors.
