When news broke in January 2023 that Caitlin and Michael Toscano were planning to open Da Toscano Porchetta Shop at the corner of President and Cannon streets, I thought, “Well, it’s about time.” I’ve long said that what Charleston really needs is a good porchetta shop. Inside Da Toscano Porchetta Shop at the corner of President and Cannon streets on June 25.

For those not familiar with porchetta, think of it as Italy’s answer to turducken. Admittedly, Italy’s version has been around a lot longer, and though it requires just a single animal — a small pig — it’s an equally involved preparation. I saw one prepared at a cooking demonstration once and it took the chef only about 83 different steps with a knife and cleaver to completely debone the animal while leaving the entire skin intact.



Once devoid of bone, the pig is stuffed with garlic and herbs like rosemary and fennel, the skin stitched back together and the whole thing trussed with string, ready for the roasting spit.
