A new restaurant celebrating the “energy and spirit of South America” has opened on one of Bolton’s fastest growing retail parks. The new branch of Las Iguanas on Middlebrook Retail Park seats more than 200 people across indoor and outdoor areas. The venue started serving on May 18, in the shadow of Bolton Wanderers FC’s Toughsheet Community stadium.
Las Iguanas managing director Lisa Gibbons said: “South American cuisine and flavours are growing in popularity around the world and UK consumers are discovering these exciting new flavours. “We’re passionate about sharing the distinctive energy, authentic flavour and spirit of South America. The venue is now open (Image: Eggmedia Ltd) “Our travels have taken us to some of the most exciting kitchens in the world from the beaches of Rio to the Amazon rainforest, from urban Buenos Aires to bustling Mexican markets where we’ve discovered delicious dishes cooked from amazing ingredients.

It joins a growing selection of well-known high street names at Middlebrook, with more than 60 other restaurants.
