ALBANY - Beignet Bellies opened in the MVP Arena over the weekend. The cafe features a mix of sweet beignets with salted caramel, chocolate or filled with fruit. There’s also a mix of savory beignets for breakfast and lunch, as well as salads.
Owned by Josita Walker, it was founded in 2022 after Walker took a trip to New Orleans and had her first beignet. She originally opened a location on New Scotland Ave before relocating to the MVP Arena. Beignet Bellies and its logo honors Walker’s father, pastor Isadore Burns Sr.
