GIBBON — The Gibbon family that bought the Cosmo Treats food trailer includes an 11-year-old entrepreneur. The family already has an ice cream truck, which belongs to Jackson Thornburg. Jackson, who’s 11, owns the truck.

Jackson Thornburg (11, right) serves Jason White of Minden a root beer float on Wednesday, June 12 in Gibbon. Thornburg’s dream job is to open up an ice cream shop with a storefront. When the family bought the ice cream truck, Jackson had $4,000 in his savings account.



A family member gave him a loan to make up the difference. The family has been selling ice cream out of the truck since July 4 of last year. Business is very good, said Jim Rayburn, who’s the head of the family.

Rayburn bought the food trailer from the Platte River Cosmopolitan Club to expand the business, and to serve as insurance in case the ice cream truck needs work. The people behind MKS Ice Cream include Jim Rayburn and his fiancee, Joni Thornburg. Also pictured are Rayburn’s son, Andrew, and Andrew’s girlfriend, Chrissy Gibbs.

At right is 11-year-old Jackson Thornburg. From the Cosmo Treats trailer, the family will sell hamburgers, hot dogs, ice cream and funnel cakes. Rayburn expects to start using the new acquisition in a couple of weeks.

The exterior won’t look much different, except that it won’t have any mention of combating diabetes. But the ice cream truck isn’t going anywhere. Jackson Thornburg runs the counter, taking customers’ orders.
