A Cork man is following in his family's foodie footsteps with plans to open up his own new bakery - transforming a former post office into a bustling new cafe in the suburbs. Ruairi Domican Byrne has taken on the lease of the former Post Office property on High Street, which will open its doors as Ruairi's Kitchen before the end of the year. Ruairi is a third-generation baker, having grown up watching both his grandmother and mother in the kitchen and helping out in the family cafe in Macroom .
The popular cafe - Buns n Stuff - was a hit in Macroom right up until the recession forced the doors shut in 2010. Now, over a decade later, Ruairi is hoping to revive the family tradition with an ethos of "good, local, homemade food." Ruairi has worked in food service in bars and hotels around Cork for the most part of 15 years.
After Covid, he was inspired to follow his dream and work for himself - setting up his business as a full-time cake maker and decorator. Ruairi’s Kitchen has been operating out of the small apartment shared by Ruairi, his husband and their dog. What started out as a small operation for custom occasion cakes has boomed over the last three years.
Over the next few months alone, Ruairi has 150 wedding cakes to make and decorate - no wonder he says it was "time for a bigger place to bake from."
