PRESTON — The Sweet Spot and Sandwich Shoppe has been a staple in the Preston community for more than 20 years. Brenda Eickhoff began working there 11 years ago and never planned to take it over. However, seven years ago she decided with her husband to go for it.

The shop is open Monday through Friday and carries a wide variety of sweets, sandwiches and salads. “My husband makes all of the cheesecakes,” Eickoff said. “I make all of the pies and cakes, and I have an employee that helps me make all the bars and other sweets.

She also makes all my salads.” In addition to the homemade desserts, The Sweet Spot and Sandwich Shoppe has daily sandwich specials. She said Friday is one of the restaurant's busiest days.

“We get a lot of people in for our beef brisket,” said Eickoff. “My husband smokes that himself, and he dices it up, and then we serve it on the sandwiches and people absolutely love that. .

” ADVERTISEMENT Eickoff loves seeing the group of regulars who come in every day. “They come in and have their coffee, and they visit and they chat, and it's good having them here,” she said of a group of women that come in for coffee nearly every day. Throughout the years, Eickoff has tried to be consistent.

Although during the pandemic, she changed the interior of the business. “The pandemic made us have to rethink a lot of things and redo a lot of things here, in the store,” she said. Eickoff said the business .
