Jonathan Ross, master sommelier at The Global Ambassador knows a bit about rosé—and not because he’s a highly-trained wine expert, which is certainly enough, but because he has spent the past year curating one of the nation’s most expansive rose wine collections for the hotel’s théa Mediterranean rooftop restaurant—40 offerings to be exact.
The efforts have been noticed, as théa was just named one of the Best New Hotel Restaurants in the World by Conde Nast Traveler. Ross and hotel owner Sam Fox have the right idea—rose wine just makes a rooftop dining experience that much better. And, argues Ross, the cuisine, “Rosé really makes pairing wine with food a lot easier.
We often want the flavors of rosé (strawberry, rose petal, thyme) to match a dish, but we don't want the structure (tannin) that comes with the fully macerated red version. Rosé fills that gap nicely.” Ross cites a current fan favorite at théa —Chateau Simone from the Provençal region of Palette, next to the city of Marseille (the bouillabaisse capitol).
