National Ice Cream day is coming up (July 21) and I wanted to put together a really special recipe for all of you. Enter a homemade ice cream sandwich — with everything made from scratch. I promise it’s not as intimidating as it sounds, and it’s more delicious than I could have ever imagined.

Ice cream sandwiches are nostalgic for me. I have vivid memories of my grandma calling us into the house on a hot summer day asking if we wanted Popsicles or ice cream sandwiches to try and cool down. I always opted for the sandwiches; there is something so perfect about a chewy cookie and soft and sweet ice cream.

This recipe is a bit more elevated than the store-bought ice cream sandwiches we used to eat as kids. I wanted to create something that had various depths of flavor and texture. However, I didn’t want it to be intimidating.

Today, we are making a honey pistachio salted caramel ice cream with a brown butter brown sugar cookie. You start with blending honey, pistachios and sweetened and condensed milk to make the most delicious pistachio cream I have ever experienced. To finish off the ice cream, you create a soft whipped cream and gently fold the pistachio cream into the whipped cream to make your ice cream base.
