New York City-based Death & Co. , a major player in the craft cocktail world, plans to open a high-end bar in Pioneer Square next year. The bar will join three new culinary projects from James Beard Award-winning chef Renee Erickson in the burgeoning RailSpur development .
All four bars and restaurants will be housed on the ground floor of the commercial development at 419 Occidental Ave. by summer 2025. With the boldface names involved, this venture is shaping up to be Seattle’s biggest restaurant development next year.
More Death & Co. plans to open by next summer with a 70-seat bar and outdoor seating, said founder and co-owner David Kaplan. Death & Co.
already has four locations, in New York City, Denver, Los Angeles and Washington, D.C. The Seattle bar will feature a drink menu of 24 to 36 original cocktails, and the food program will be similar to the shared plate concept at its Los Angeles bar, Kaplan said.
The 17-item menu in L.A. also includes buttermilk fried chicken and a lamb burger.
If construction starts on schedule, the three neighboring projects from Erickson’s restaurant group, Sea Creatures, should open around the same time as Death & Co., said Sea Creatures co-owner Jeremy Price . Erickson will open a high-end, 40-seat restaurant with a European-coast-inspired theme, with oysters and other seafood dishes and a large wine list.
